Your valve clearances should be:
Intake .08-.12 mm (.003-.005 in)
Exhaust .12-.16 mm (.005-.006 in)
I usually start all gaps in the middle of given specs, then fine tune from there.

VT1100 has two spark plugs per cylinder, the sparkplug caps are snap-ons so they're fairly easy to remove. You need a spark plug socket wrench to remove and replace the spark plugs.

Fuel pump relay...had this problem a couple years ago. It's used for if the bike tips over, it kills the fuel pump. You can bypass this or find a used relay. New ones are discontinued. It shows in the Honda service manual for that year how to bypass the relay to test the fuel pump. In your case it's to test to see if the relay is the cause of it dying...mine would die and then not start for some time...then it would start as if nothing was wrong until it happened again.
