After maybe 20 minutes or so its starts to knock goes off specially when you at highway speed,and the speedometer fuelmeter is all wacky since I flushed the gas tank

If 20" tires weren't factory, your speedometer and odometer could be off by as much as 20%. Find a stretch of highway and watch odometer between two mile markers and check if it's accurate. Also depending on options, load, quality of fuel and regular maintenance have a large bearing on MPGs also make sure tire pressures are up.
The 04-05 GM truck have a special policy for the speedos. if you have less than i think 70k, your local dealer should replace if for free. Double check this. If not you will have to pay for a new cluster, it runs about 450 or so.
I would recomend checking to be sure the fuel and vacum lines n the tank are installed correctly, Open the fuel filler and start the bike and see if it has any change on the problem, if so you have a vacum issue.
