Generally an indication of service being due since it is of amber colour, red being the more serious warning colour. I suggest cessation of use without consultation of factory service manual to make certain.

I just got my (new to me) pre-1990 Wolf 36'' range connected (by a certified pro). 4 burners, 12'' fry top/charbroiler/cheesemelter thingie on left, 4 burners on right, 29'' oven - propane. It has not been...

the oven pilot has 2 setting first setting is for you to light small flame, should not be all yellow if it is it has a dirty orifice inside the pilot hood, you can remove this by disconnecting the pilot line from the hood and removing orifice for cleaning, just rub it with a cloth.once clean and replaced you light pilot and check it out. if its ok turn on oven and secondary pilot will ignite that why it got bigger!! this heats a flame sensor to allow 100% safty vavle to open to let gas into burner so yuo can cook.

Pilot hard to light

The pilot light could be dirty...which makes it smaller and thus takes a lot longer to heat the Powerpile ...the pilot should be BLUE not yellow or yellow tips and should fully envelop the Powerpile element in the pilot,,,if it looks small and dirty....try tapping it with a screwdriver...this loosens the dust and usually increases the size of the pilot....becareful to put the logs back in exactly the poosition described in the manual to eliminate Carbon buildup and a potentially dangerous condition

Oven pilot light too large. Can I adjust it or simplely blow it out and relight when needed?

No, do not just blow it out and relight as needed. This could be dangerous. Besides who would want to light the pilot every time you use the oven. A correctly adjusted pilot light uses a negligible amount of gas. A correctly adjusted oven pilot light should be steady and blue about 1/4" to 1/2" high. If it is yellow it is getting too little air. If there is a space between the flame and the feed tube it is getting too much air. To correct either problem turn the pilot adjustment screw slightly on the gas line near the pilot light as directed by the manufacture. Once you get it adjusted correctly leave it on.
