Rough idling when warm heritage

Tickover to fast when warmed up.

I don't know the term tickover. If you mean it idles to high then lower the idle. It's a carbed bike right? Idle screw is on backside near front of carb but remember these Twin cams run on oil volume not oil pressure. The bike needs to idle between 1000 - 1200 rpm to maintain proper oil circulation. If you turn the idle down to get that lope or potatoe sound from the bike you can starve the engine of oil and burn it up. These aren't throw away rice rockets of yesteryear.

Bike is back firing and bogging down when I get on the throttle. Need to know how to adjust carb.

Before adjusting the carb, has the bike been setting for a long period of time? Has anything been done to the bike that would change carb settings? If it's been setting, there is probably a gum build-up in the jets and fuel passages. If it sat all winter, my solution is to add 1/2 can of SeaFoam to the gas, lock down the front brake and rock the bike back and forth mixing the fuel and additive well. Start the bike and run at a high idle until engine temp is normal. Shut it down and let set for an hour or two, allowing the mixture to work in the carbs. Restart and run at high idle again. If it seems to clear up somewhat, ride the bike several miles to check if it worked.

I have a 05' Yamaha 650 V Star and it will only run if the choke is fully out, hot or cold engine. If the choke is pushed in, it immediately dies.

Has the bike been parked for two weeks or more? If so, the fuel has most likely gummed up and plugged fuel passages and jets. Might try adding 1/2 to full can of SeaFoam to existing fuel in the tank, crank the bike and run (with choke if you have to) at a high idle for several minutes. Shut it down and let set for an hour or so allowing the SeaFoam to work. Start bike again and run at high idle again, trying to run it without the choke. If this doesn't work, then the carb probablyneeds a tear down and a manuel cleaning and reset.

I can get my j1 to idle but when i open the throttle it stalls.the pistons in the carbs chatter (all 4) as soon as i open the throttle before it cuts out

Has the bike been setting up over winter or for a length of time over a couple weeks, with gas in the gas in the tank? If so, the ethanol additive to gas has caused the fuel to gum up and block carb jets and passages. My recommendation, if setting up is the case is to put a can of SeaFoam in the fuel tank, shake the bike back and forth to mix the fuel and SeaFoam. Start the bike and run at high idle for a few minutes. Shut it down and let set a couple hours and start and run at high idle again. Repeat this several times trying to accelerate. If it's a gum problem, it should clean itself up with one can of SeaFoam. If it doesn't, it could be an adjustment problem, or the carbs will need a manual cleaning.

i would be looking at the voltage regulator,if the regulator is faulty the alternator will not be replacing the voltage that the bike needs to keep running

sound very much like a vacuum leak.... also maybe your timing is off? possibly advanced? try retarding it with the distributor if thats the case...
