If the best you have is large screwdrivers to pry the tire onto the rim then I think you might want to let the shop do it. It is not the easiest thing to do.

I have a 03 yz 250 How much PSI do I put in my tires for racing track

The factory recommends 15PSI. I usually run 12PSI.

Depends a lot on what tires you have and what kind of "track" you are riding. You typically want a firm tire (more pressure) for a soft surface and a softer tire (less pressure) for a hard track but there are always exceptions depending on the details of the track and what tire you have mounted up. If you are riding a track with a lot of hard braking bumps or firm ruts or even tree roots (if you ride trails) you should run more pressure - like maybe 13-15PSI. If you run less than about 10PSI you risk pinching the tube and getting the rim damaged from sand intrusion between the bead and the tire which can cause a lot of problems unless you change your tires frequently and run multiple bead locks. To run really low pressures usually means you don't have the best tire on your bike for the conditions in my opinion.

To simplify:
Soft track, hard tire - run 12-15PSI
Hard track, soft tire - run no less than 10PSI

What is the weight limit for an yamaha 80 yz

I don't know but would guess about 150 lbs. Check the sidewall of the tires for the limit on the tires. The bike limit is probably linked to the tire limit.

My friends 2009 Honda CBR 1000 shows about 8mph less than my 2010 Yamaha Majesty. Are there know issues with the Majesty? Could there be something wrong with my bike's speedometer? I just bought it 2...

Sometimes there is some variance between identical new motorcycles. I had friend claim that his BMW speedometer was accurate and my Honda was off by 5 mph. We had the same brand(Dunlop) and size of tire. I changed my tire, same brand(Dunlop), same size, different "style" and now both speedometers read the same speed . This tire was the same number size but mounted stood taller than the old tire. What my friend failed to realize was that his cycle came stock with a Metzeler so he was not reading accurately either. So do not dismay, your friend may not have the correct height tire on his bike. You will have to make some speed runs past on of those signs that tell you how fast you are going and see how accurate your machine is. My 2009 Suzuki DR200 reads 2 MPH slow by the police speed signs.

How come my yamaha raptor 700r will only go 76 with aftermarket tires but with stock tires it goes 80

Most likely a diameter change. Changing tire diameters is like changing gears. I used to road race shifter karts and this was a tuning aid that was often over looked by most. Tire construction/tread design/rim size/side wall will all affect growth at higher speeds basically changing gears progressively. Watch a topfuelers tires and you clearly see this. Your new tires are probally not "growing" as much. This not neccesarily a bad thing. Just different characteristics.
