sounds like timeing to me.

First things first, have someone check the fuel pressure with a gauge.
The EGR valve is not supposed to be open unless the car is moving at more than 20mph.

Do a fuel pressure test. If you have compression, and good spark, this is where you should start.

New air cleaner needed? That's the simple, cheap fix. Happened to my wife's Volvo once. Thought the EFI was toast and the air cleaner was caked with gunk. Maybe dirty injectors. Try some fuel additive to clean them.

If it is the EFI system, maybe something simple like idle control valve (happened on my newish Subaru), or one of the other sensors: TPS, O2, MAP/MAF, etc. It simply sounds like it is running too lean or rich at idle. Injectors could be bad too. Sounds like you need a different mechanic.

Sounds like your throttle body and throttle plate are full of carbon.You also have a idle air control motor with a pintle on the end that gets carbon on them.Go to your local parts store and get a can of throttle body cleaner and a old tooth brush and clean throttle body and plate and if you can remove the IAC and clean the pintle and bore. that should take care of your stalling.

I would suggest a computerised diagnostic to find the fault else it may take forever..

Start out by checking for vacuum leaks.

if car is running hot flush your system never by sencors this changes electricial sys settings and can cost you major money since car adjusts {for while } to new settings
