Here is a manual for the yamaha.
If you get one spoke right then tapping it will give a certain pitch/sound. Then you can compare it to the rest. There is a technique for lacing a spoked wheel, it would be advisable to have a professional do the work.

72 nm for axle and 23 for pinch bolt. these specs are for the closest i could find a 2000 fazer 1000, i dont worry about torque settings i just do it tight, then re check after a few miles.

SOURCE: i need the torque spec.
just make sure it good and tight. torque specs are more for surfaces that have gaskets or something you dont want over tightened. I use a 3/8 impact and just run it down tight.
