have you tried adjusting the idle a bit higher to get it to stay?

won't stay on with choke on or off?

Check that the choke plunger fully seats when closed and does not feel sponge or spring back when closed. If not fully seating you will need to reseat it in proper alignment at the carb.

Hello the Carb needs cleaning most likely the rich start system and low speed idle circuit is partially blocked.
be fore you decide to pull the carb you may want to try a fuel cleaner the brand name is ( Sea Foam ) so if the carb is just lightly gummed up this may clear it up.

My 2003 Honda Valkrie starts with the choke but won't stay running wiyhout it.

That is a sure sign that the carbs need cleaning. The low speed idle jets are plugged up and the choke cuts back the air and allows more fuel in the mix. There are 6 carbs on the Valkyrie so have someone who knows what they are doing clean and sync them.

Cuts out when idle

the idle air control valve usually takes over the idle after coming to a stop with no gas being given by the driver if it is not working properly the car will not idle at all this is probably what the problem is
