Hi! I presume you are in a warm climate? if so 10W40 Synthetic is an good all rounder & should do the trick. I presume you mean Brake Fluid? if so D.O.T. 4 is widely available now and far more superior to the old D.O.T.3 which was about when bike was manufactured.
Hope this Helps!

Why does my 86 yamaha fz600 get hot and smoke very quickly?

Air cooled bike engines do get very hot... The thing I need to know is what does your spark plugs look like? A bike that had sat for a year may collect oils, etc and smoke a bit until all is burnt off. However if you are certain this smoke is above and beyond a reasonable amount there are a couple items to check. Are the correct spark plugs on the bike, check for vacume leaks, did you check float height?
Do you have a way to check engine temps? And by smoke do you mean off the engine or out the pipes?

Fork air pressure on my 1987 fz600. the specs i saw on line just said kabya air pressure. another bike i had was only supposed to take five lbs each. is this the same?

It is about the same but it is better if you replace your fork oils with a SAE 15W fork oil, 480ml in each fork.Works a lot better than the stock 10W+air.

What level should the engine oil be at for a 1987 Kawasaki ZL1000

The oil level should be in the center of the window. Use 10w40 motor oil in the gear box. Don't use any synthetic oils, oil marked "EC", or oil with "special" additives. Stick with the major brands; Pennzoil, Quaker State, Mobil or Shell.
