What kind of antifreeze do I use in my 1997 Yamaha yzf 1000r

a jump box is nothing more then a battery with leads on it so where are you connecting it verses the new battery you put in the bike. that doesn't make since unless you are connecting the box right to the starter motor then it be constently running the motor untill you unhooked it. check all your fuses and examine all wire harnesses for damage, burns, or any mellting.

I believe there is no dipstick, but there is a viewing window on the right side (sitting on the bike) next to the oil case. its just a little small around window about the size of a nickle

Sounds like you have blocked or partially blocked pilot jets,
this can happen if bike has been sitting anf fuel has gone stale in bowls or contaminated fuel in tank.
hopefully bike if well serviced or could be caused by air leaks or even tight inlet valve clearance if bike has done a lot of miles

I have a 1997 1000R, I had my back brakes lock up and while trying to get going enough to get to my house a mile away my bike acts like it's in nuetral when it's in gear. You can hear it and feel it go...

Can you still wheel the bike? Does the chain move freely? Unless you've had a major gearbox problem it sounds more like the front sprocket has come off and jammed the chain up. They do have some issues with the clutches on those bikes but nothing that would cause what you are describing.
