Any part of the auto that uses oil for lubrication will get damaged if run without oil. The gears rub against each other and get heated up and may be even melt if the distance is too much.

Sounds like you are developing a coolant leak into your oil. Some of these engines have been known to blow an intake manifold gasket and leak anti-freeze into the crankcase. Most times, it is a head gasket that is blown out. Good luck.
That could be from not having any oil pressure "oil pump failure, clogged filter, etc" or from a faulty oil pressure sending unit. More tests would need to be performed but is it really an oil pressure light or is it the change oil light. More info would be needed
