Could be quite a few things. I am under the assumption you already checked the fluid level. If that is the case, I would ensure there are no air bubbles in the system and or no leaks. A leak or a bubble will not allow the system to pressurize and move fluids through the radiator where the fluid can then be cooled. Also, I do know that some VW's suffer from the water pump fins cracking off which doesnt allow the fluids to circulate like they are supposed to. The last and final thing it could be is a clogged heater core. You can try by passing the heater core and see if that fixes the problem.

I would check in the following order and test after each one
1)Check Fluid Level
2)Burp System
3)Replace Thermostate
4)Bypass heater core and see if problem persists
5) All else fails replace the water pump.

Good luck

Sounds like it is low on coolant. Add coolant, drive the car, let it cool down, and then repeat the problem until the coolant level stays constant in the coolant tank. If it doesn't stay constant after a few tries, there may be a coolant leak inside the engine (blown head gasket or intake gaskets).

When i turn off the ac, there is a clicking sound coming from the dash on the passenger side, what could that be?

It could be that the metal ductwork is now heating up and expanding after being cooled. But that isn't a constant click, very intermittant, so if your clicking is constant that wouldn't be the problem.

If it is a constant click it could be that you passenger side sensor is calling for increased cooling and not senseing that the AC was turned off. If the clicking stops after you turn the engine off and then immediately restart it, that is probably the sound.

My 2005 ford escape seems to have a heat issue. When the heat is turned on at it's hottest, it's hot, however when tuned down to the midway point, it cools down quite a bit, what may be the issue ?

I assume the vent door is loose or broken, and when it is set, maybe half way on the dial, the door moves to far closed. It is either that,or the control is bad.
