Do us all a favor and post the solution; I can't offer any help but thinking this thing through, it seems you have hit all of the usual suspects already and I admit I'm curious about the source.
Your coolant may be too diluted and then the water portion evaporates. It could also be your heater core. Do you sometimes smell coolant from inside the jeep? Do the windows periodically fog up on the inside? Pull the passenger-side carpet back at the very front where it begins and feel the padding beneath it for moisture. You may have a big enough leak for you to notice a lower coolant level over a certain time, yet small enough that you still get heat and then it dries or evaporates before it seeps through the carpet.
