Do you know why when I look for a carburetor for a 1983 F-150 there is a gap from 1980-1983 that are not compatable?

I think 1981 and newer carbs are electronic feedback control and are used with computers.Early carbs don't have the feedback controls.

1980 ford f100 straight 6. truck was running fine then got to where it would not idle. changed plugs and wires but did not help also moved distributer to check timing with no luck neither. any ideas would...

you need to check for vacuum leaks around the intake manifold.
just use a little carb cleaner and spray around the intake while some one is trying to keep it running. if it changes the idle that is where your leak is
unless your plugs were black then that is a over fuel problem and your carb float is sticking.
good luck
