Question about 2001 Pontiac Grand Prix
As far as using alot of fuel that could be a number of things such as a tune up. As far as your speddometer needle going up and down, Every Gran Prix in the 2000's that i have worked on does the same thing. Why ? you got me but it is common and I wouldn't worry about it. The shutting down after starting is common also. I am going to assume you have the 3800 (3.8 liter) engine. what I have come across is that these vehicles are losing fuel pressure while sitting and the only way I have been able to repair this problem is to change out the whoole fuel pump assembly. Unless you have a leak somewhere, which could be in your case do to using alot of fuel this was the only way i have been able to solve that problem. I would check for a gas leak in your case, most likely the fuel injector O rings if you do have a leak. I know it wasn't alot of help but wanted you to know that due to the fact you have a Grand Prix, your problems are common. i hope this helps you at least a little and good luck.
