I had an oil change done recently but it still says that i need one. How can make the "need oil change" stop showing up on my dash. thanks

1st thing - DO NOT DRIVE as you may be low/out of fluid.

Check both your automatic transmission fluid and your engine oil level. Both should be described in the owner's manual.

My impala keeps chiming and saying "OIL PRESSURE LOW, STOP ENGINE", i had an oil change done, and it still hasn't stopped.

A common cause to your problem is a faulty oil pressure switch. This monitors the oil pressure and when defective, can falsely trigger the low oil pressure light. If the switch is good, the oil pump may be bad. Listen carefully for "ticking" under the hood. This would be a sign of insufficient lubrication to the lifters/rocker arms.

The "Check Gauges" indicator started

First and most important. Check your oil , they may not have put enough in. Your oil pressure could be dropping low enough to set off the warning. Also , a long shot , there could be a problem with the new oil filter . Neither of these would affect the coolant gauge though.
Oil pressure sender units fail all the time , it is just suspicious that you are having problems right after having a service done.

2000 vw jetta 2.0 checked oil no oil showed on dip stick. saw that oil leaked into coolant system. replaced head gasket w/ new head bolts. flushed system, drained oil, new filter. after all done no oil...

Most likely place for oil into coolant is oil cooler, the aluminum box that mounts between the oil filter and a flange that comes off the block.

We recently upgraded our oil so that we only have to change the oil every 5000 miles instead of 3000 miles. We are also now seeing on our odometer screen "Oil Pressure Low - Stop Engine Now". ...

I would not drive the car. I would have the oil pressure checked with a mechanical oil pressure gauge to verify that you really have an oil pressure problem. There is a possibility that the oil pressure sensor or wiring is bad causing the light to come on. Hope this helps :)

U can keep driving, just make sure the oil always shows on the dipstick when u check it, if not then u can cause the engine to just freeze up from lack of lubrication.

Valve cover problem

If your mechanically inclined you'll be alright, but by the sounds of it, your not even sure what that part is, ( no offence intended) so if that's the case, yes I would have it done, but don't be afraid to get a quote first.( quotes $78-$127 which includes parts & labor. Usually small garage's on low price end, and dealerships on high end.
