With the cost of having your brakes replaced by a professional I can sympathise with you doing it yourself.
Though , "Brakes" is a term that encompasses rotors , pads drums and shoes , it also includes the callipers and cylinders...
Which parts are causing you the problem?

If your truck has a brake booster, I suspect the vacuum hose to the booster has gotten fuel into it or just gotten old and is collapsing inside.

Do I need to bleed the old brake fluid of my nissan quest (1995)before refill the brake fluid reservoir, or can I mix the old one with the new one?

I don't see any reason why you couldn't just add brake fluid, it can be a bit involved in removing all the old brake fluid.

If you have sensors on your brakes, the old sensors are telling your car you haven't replaced your brakes. With every time you replace your brakes you need to replace the brake sensor too. the old sensors are warn out.
