Hi,
a 6ya Mechanic can help you resolve that issue over the phone in a minute or two.
Best thing about this new service is that you are never placed on hold and get to talk to real repair professionals here in the US.

Why do headlights turn off at random intervals?

Run a new ground wire to the lights and ground it direct to your engine. My car was doing this even the heater and lights and radio cut out once in a while . My mechanic spent several hours trying to find the answer and finally he said I am going to try something and he ran a new ground from the engine and wallah It worked. For some reason the existing ground was not working and it was grounded to the body. its self. He said maybe rust on the body would not let the power flow right.

I drive down the road my headlights go out all other lights work truck stays running switch from brights to dims a few times and they come back on

The headlights are powered by the battery through the ignition switch. If they are not working properly than there is problem either in the ignition switch or with the connecting cables that may have partially damaged or the insulation may have worn out.
