You can't, they're hydraulic lifters and are NOT adjustable.

2002 toyota highlander v-6, can I attempt to change the spark plugs? I'm concerned about the back 3, what's involved?

Look give it a try go slow. Hit them with WD 40 or equilivant. If you get stuck don't sweat remove valve cover(s) and its gaskets and plugs are right there.
It could be a little more work but you can do it.

You cant adjust the belt tensioner. You have to replace it if it wont provide the proper tension.

I am looking for a diagram on a 02 toyota highlander v6 timing belt set up

You don't need one. Get a T belt from toyota. It has 3 white lines on it and and arrow mark. 2 lines are solid and one is broken. Put the arrow facing away from the engine. The cam gears have a dot punched into them near a certain tooth. This is where the solid white lines will line up with. The crank gear will have a dot also. It will line up at 90 degrees from the top, towards the front of the car. This is where the broken line will match up with. With the belt installed with all lines on their proper dots and arrow away from the engine, you valve timming is correct.
Of course you need to remove and compress the tensioner also. I assume you know this already since you didn't ask.

Need to change spark plugs in highlander.

Those back plugs are a bear to get to but they can be got. There is no easy way. You need to get your hands back there and pull the wires off and use whatever combination of extensions to do it.

2002 highlander vehicle shut off

I am having the same problem with a 2002 Highlander, V6. I have read in other posts that the Idle Control valve may be to blame. I took out the throttle body and cleaned it out thoroughly. Solved some of the problem but it will occasionally be difficult to start when cold and I drive a short trip. I plan on replacing the idle control valve in the near future. I found a temporary fix is to turn on the car and keep the idle up near 2000 rpm for about a minute (allows engine to circulate oil) and then rev up the engine to about 5000 rpm a few seconds at a time. I am then able to drive off with minimal problems.
