Sounds like it might be caused by low fuel pressure to the injectors. Maybe the fuel filter needs to be replaced. If that doesn't help, then it might also be the electric fuel pump in the gas tank.

Backfiring/spitting through carburetor, no vacuum leaks found, thinking cause may be timing because it runs decent in first and second gear and starts having problems in third @ about 45 MPH

You did not post anything about the vehicle. Year make and model would be nice. With that in mind though, you could have a cam or valve issue as well as timing chain slop.

My 2001 vw beetle spits and sputters and backfires when I give it gas will idle fine.

You need to have a diagnostic done on it - I would suspect the throttle position sensor ( TPS) but there are other sensors that could cause this too. getting a diagnostic done will save you a lot of money and time. Many auto parts stores and shops can do this for a nominal fee or even free, if you can get it there. if you cannot drive it there ( idling along is so slow) call around and find a shop that can diagnose and repair it. Most of the newer VWs require very vehicle specific equipment to diagnose, so make sure they are equipped for VWs.
Hope this helps and thanks for using Fixya!

I have a 94 gmc c1500 2wd 6cy after it spits and sputters and sometimes backfire what causes it

you may have a bad egr valve.thats usually causes this. you can spend a fortune replacing sensors,i can offer an alternative if you're near an autozone or advance auto. they can code read it and the codereader will spit out the code thats the issue. free! they can code read anything up to 1999 but i'm saying most very likely a bad egr valve hope this helps and thank you for choosing fixya.com

What is causing my 1997 Jeep Grand Cherokee Limited Edition to spit, sputter, lose power and backfire?

Sounds like a timing problem, check timing and if off could be timing chain worn out especially if there is excessive miles(200,000 miles or more)
