I have a 1998 Mercury Sable (a car I love very much, BTW.) But shortly after all the snow, ice and extremely cold temperatures here in New England, my brakes started feeling "crunchy", as if there was ice caught up in the brakes somehow. However, after several thaws, it's still happening! If something is stuck in there, how do I get it out?

What you will have to do is pull the tires off and first look at each brake. Now if their is something in their remove it. Also buy some brake cleaner spray from the auto store and spray the brakes. Because it might be salt, sand or what ever else they use on your roads. After you do that and it is still doing it you will ether need to take your car to the brake shop or replace the pad or shoes your self.

Me I beleave one of the pads might be broke. (split due to the water getting under the pad and it base them freezing and pushing it a part. I replaced about 15 sets here in Dallas during our last freeze

Cracked, frayed or worn out rubber won't stand up to temperature extremes. Don't get stranded on your next trip because of a $10.00 belt or hose! <br /> Replace the Cabin Air Filter if the vehicle is equipped. Outside contaminants from Fall and Summer driving are stranded in the cabin air filter and running the heater on "high" in the extreme cold only sends the micro-particles deeper into the vehicle. <br /> Protect your vehicle's paint. Rain, snow and salt are extremely tough on paint. A tough coating of quality car wax will add another barrier in-between road grime and your vehicle's paint. <br /> Last but not least, prepare a roadside emergency kit including a flashlight with fresh batteries, a blanket, food bars, water bottles, cell phone, jumper cables, flares, Fix-a-Flat, HELP Sign, and a first aid kit.

Well anything is possible, but I would expect the transmission to work given the time and mileage.
Is there any way you could drive it a short distance before spending much money ?
I am assuming you are having the fuel tank drained and the cooling system flushed among other things.
I would change the fluids and try to drive it a few blocks before spending money on much else to see what it will need.

My 2001 mercury sable runs hot (temperature gauge goes high then drops back at half also

Check your coolant level visually by removing the radiator cap (only when it is cold). Also make sure the coolant temperature sensor for the cooling fan is functioning properly. These are set to operate the fan when the engine coolant reaches a predetermined temperature. These go bad in time and need replacing. Sounds as though yours may be working intermittently.

Sounds like a flap problem on heater unit.

Get your head under the dash and check for movement, when you operate temp control hot to cold.

Check your transmission fluid. You could be alittle low. Check it hot in Park while running.
