Problem for BMW 2001 325

Temperature guage going on red

temperature guage going on red when in traffic jam.
fan does not seems to cut in. Recently changed the thermostat. Need to know what controls the fan and what can be done before major disaster happen to the engine.

Year of manufacture 2000,Model 3231.

Any help is most welcome

its electric you might need to do a waterpump too or didnt plug the fan back in
