Disconnect sensor then a/c will read it as default or not read it so ac will work more manual than auto

I would imagine that the car is fitted with some sort of menu where you can change the vehicle's readout settings into metric, so that now your car is reading in kilometers per hour and is also displaying temperature in the metric range.
You should access any in vehicle computer and reselect the ranges you wish to use.

I have a 2004 jeep cherokee 2.8 crd and i am finding it ******* diesel . im only getting 19 mpg where im told i should b getting 25-30mpg .just wondering if anyone has come across this problem

If you own a cherokee 2.8crd in UK, the fuel consumption readout will be in miles per US gallon. To convert this reading to imperial galls multiply by1.2. Example;20mpg showing on the readout is actually 24 mpg imperial.

Went through car wash and outside temperature reading 82 degree farenheit - it's 110 outside here in Phoenix, AZ

This part is most likely in front of the a/c condenser/ radiator or right behind the grille. There really is no way to protect it from getting wet as it will get wet when it rains anyways, however the high pressure of the car wash jets could have messed the sensor up.

Outside temperature reading -40 and outside temperature sensor has been replaced

had the same problem, it needs time to calibrate, you have to drive it over 19 miles per hour for at least 10 minutes or so and it should reset itself. I would just take it on a drive if you haven't done so yet.

Thermometer not reading correctly

I would guess the outside thermometer has lost its calibration.
Does it seem consistently 5, 10 or 20 degrees off all the time?
Let me know.
