To answer your question yes the temperature is normal for this vehical 205-210 is right at the normal range Normally you will have the 185-210 deg. thermostate installed in this vehical ''
You should notice that it does go up and you notice that it goes back down around the 210 degree mark this is telling you that the thermostate is working fine ok also if yo notice that it goes up and stayes up over the 210 -then you may have a problem this could be the thermostate may not be operating properly or the radiator may be clogging and needs to be flushed or your antifreeze mixture is not correct ok?

Whats the normal operating temp on a 2000 Suburban 5.3 Vortex Eng? It's 90 above degrees temp wise in the city. Temp gauge in the truck shows between 200-210.

That temp is normal especially considering the ambient temp. A 50/50 antifreeze/water mix not only prevents freezing but raises the boil temp. The pressure in the system also does that. So, in reality, your boil temp is above 230 degrees.

Touch both heater hoses going to the heater core. They should both be hot. If they are, then the problem is probably a broken or binding blend door or bad blend door actuator. If one hose is hot and the other cold, then the heater core is clogged.

The fans don't come on until the temp hits around 225 degrees, so relax, your temp range is normal for the Northstar engine.

The engin running temp is 210 to 233, but the temp outside is a 103 degrees today. Is this a problem.

Most cooling fans come on at about 225 degrees. 233 is a little high, but if it comes down pretty quickly, you should be okay. You might need a coolant flush.

2000 chevy silverado normal operating temp 210 , recently temp rises to 250. water pumps no leaks therm. appears OK .

With the truck running at operating temperature, squeeze your upper radiator hose. You may have to check it a couple times allowing time for your thermostat to open. Are you able to compress the hose a little when you squeeze it or does it remain stiff/solid? Your thermostat may be stuck open or even stuck closed.

Given your high guage temps of 210 degrees and high ambient temperature of 100 degrees, your engine's stalling can very likely be linked to either one of these three causes: 1) vapor lock; 2) percolation; or 3) PCV malfunction.
