I had a similar problem with my 2000 Silvarado with the 5.3ltr. V8. I was doing the same thing as yours. I replaced the Fuel Pressure regulator and has been running fine for 2 years now..

Check the battery cable connection that is sandwiched between the battery and the outside cable, It runs the computer and if it is corroded, clean it with sandpaper. Mine was loose and corroded and I would stall out of no where.
