Could be Vacuum leak. Try to start by checking all the hoses on the Intake Manifold and the EGR and the Map sensor and see if there is any leak or loose hoses.

I would start with the vac leak idea.
And is the check engine light on when it is running ?
If so you should have the computer checked for trouble codes first.
There has to be a source for extra air coming into the intake or throttle body for the engine to run fast at idle, assuming the idle air control valve is working correctly.
That air source has to be found and fixed first.
It could even be the throttle plate not closing completely.

So i have a cadillac STS when i start it up its like it is accelerating on its own without stepping on the the gas but what i am concern is when i place the car in drive D it knocks really bad a loud sound...

Sounds like a vacuum leak. this will affect the idle causing it to idle high but with no power (at idle) so almost dies at idle in drive, (under resistance) The knocking is likely your exhaust pipe shaking and hitting under car, cos of the engine shake.
Look for a vacuum tube hanging loose from around the intake area. Maybe trim off stretched end and reattach. May be able to hear it with engine running.

Jeep starts and idles perfect no acceleration,

Sounds like the catalytic converter or muffler are clogged. There isn't much exhaust at idle, but when you accelerate your exhaust volume increases, thus if your catalytic converter or muffler are clogged the restrict the exhaust escaping out thus causing an excess of back pressure which won't allow the engine to breathe normally.

2002 dodge stratus tries to die while idling

indicates a vacuum leak
will not be a muffler problem but if the flex section of the exhaust pipe at the manifold is cracked that will affect the heated oxygen sensor reports and that may contribute to the problem

with the engine running lift hood and lisen for a vacum leak and check all your vacum lines. if no vacum leak can be found then replace the idle air control valve.

96 Ranger, "Popping" coming from engine compartment

Possibly you have a leaky or cracked exhaust manifold. After the engine heats the metal expands and creates a larger gap. As the engine speeds up the engine noise overcomes the exhaust leak noise and you don't really notice it much until the vehicle gets in to a hard pull or comes to and idle.

did you bleed the air out of the cooling system? They are bad for air locks, Also is the check engine light on? Sounds like maybe a sensor left unplugged
