How would i know if a head gasket is cracked or leaking if i dont see the water.for a 2000 cadillac deville

Well there are a lot of things to look for and they are .
1st the engine would sound differant slight hissing or running a little rougher on idle or pick up.
2nd if head gasket is starting to blow between 2 cylinders then you will get a back firing through the exhaust or carby {depending on what cylinder is blowing to what cylinder} and if you are loosing water then you will see it in steam form coming out of the tail pipe of the exhaust and engine could be breathing steam back into A cylinder which would also make it run a bit rough.
BUT IF all the cylinders are running well and you are loosing water and cannot find the cause then it could be blowing out of the overflow tank on the side of the engine,and check on the thermostat as that can alsogive you the same problems.

water pumps do not boil but engine coolant systems do from lack of water . Water pumps leak and get bad bearings but the heat comes from blocked radiators-blown head gaskets--cracked heads --fans not working and the vibration is from pistons and rings trying to bind up in the cylinders from over heat situation

Overheating a lot of new parts ,waterpump,themostat, heater hoses,fresh antifreeze, and every other day i have to put a gal or more in dur to it low , what is going on?

Unfortunately, with all you have done, it appears you may have a blown head gasket or cracked head if you cannot locate any other place that the water is leaking from. First of all I would check the car for leaks after you have been driving it and turned it off. The pressure builds up in the system right after the car is turned off and you may see leaks then that you never see. If you still dont see where the water is leaking from by doing this, then pull the oil dipstick up out of the tube and check your oil. If there is a white milky substance on the oil then there is water getting into you oil which indicates a bad head gasket or cracked head. If you still dont find water in your oil by doing that then your water/coolant is probably escaping through your exhaust by water vapor. Check your exhaust while the car is running (after it has warmed up) and see if there is any water vapor coming out. Put your hand in front of the exhaust and you should feel the moistness if there is water vapor, but you should see it as well. If so, again, it is a head gasket or a cracked head. Make sure you look for all leaks in hoses, etc, (including inside passenger floorboard from heater core leaking) before you totally conclude that this is the head gasket or a cracked head. If you cannot locate any other source for the leaks then the only thing left is the head gasket or head.

Cannot find overheating problem 1997 cadillac deville. we have installed new radiator, fans work fine, new water pump, new thermostat, catalyic converter, new hoses, and we cannot find any leaks. please...

These engines are know for leaking head gaskets. A good quick test for this is fill the coolant tank to the top with the cap off. Start the engine. If the the coolant blows out of the tank, you have a head gasket leak.

White cloud of smoke through tailpipe

well I'd say that coolant is definitely leaking into the combustion chamber, albeit at a slow rate (for now). It could be anything from a blown head gasket to a cracked block or head. I'd get it to a shop as soon as possible and not drive it any more than need be until that point.

do me a favor and pull the sparkplugs out get a compression gadge and do compression tests on all the cylinders they should be within ten psi of each other if not yes you have either a cracked head or a blown head gasket

My 2002 cadillac deville white smoke from exhaust

Head gasket. There is antifreeze seeping into the cyllinder when it's not running. When you start it, it won't fire properly until that water is blown out the exhaust. Once it's gone, in a few seconds, just like you describe, it'll run fine. The antifreeze is then being blown out the exhaust. Re - white smoke.
