Check engine light is on and my car is constantly "jumping" what may be the problem?

Check the level in your overflow tank for anti-freeze make sure it is at the appropriate level. Sometimes when the level is lower it will trigger the check engine light. Once the sensor is trigger it will trigger other components of the vehicle. If it is low, just add a little anti-freeze and water to the appropriate level.

Check engine light is steadily on but car runs fine

That may be so, but something is wrong. Get the codes pulled and you will know where to go next....ANY failure can trigger a light indication, but not all failures are noticable in terms of performance. It needs to be fixed.

Check engine light

go to Pep Boys and Auto Zone and have the code read for free.  and fix it now, as it doesn't sound like something you can wait on.
Also the oil change had absolutely nothing to do with the problems you are having now.
Cars cost money, and it doesn't sound like you are keeping up with the maintenance on this one, sadly you'll pay more in the end.
