Unfortunatley the only way to have that light shut off is to have a dealer, or an independant shop that specializes in german cars, scan the car with a diagnostic computer and clear that code that is telling the car something happened with the headlight system.

How do i change a headlight in a 07 Jetta?

Low beams are the outside lights, and the high beams on the inside. Remove the rubber cap. Squeeze the metal clip ends together and pull away from bulb. The bulb comes right out now. Disconnect the bulb from the harness of two wires. The bulbs are round with a flat side that faces up...it will not go in any other way. Do not touch the new bulb with bare hands, or oil with get on the glass and cause premature failure.

2005 and a half, Jetta 2.5 warning light inside tach display

I have the same problem, because it's difficult to see the rear brakelight halo when you are not at the right angle.  And, when my wife was driving in the Jetta--right in front of me--that's when I finally saw which brakelight was out (1/2 a halo).  (2006 Jetta 2.5).
