Put motor in truck, ran good before the swap, ran good till it went a few miles down the road then started coughing and losing power but sat idle for one year, changed the filter and pump before it ever went down the road, is that iac or fuel blockage???

There is a black fuel relay way up under the top left driver side dash that breaks its main wire solder connections on the circuit board under over-heat conditions. Resolder that relay. Starting fluid will show that you have lost fuel delivery under no start conditions. You can use the breather hose from the valve cover for this test.
When you press on the gas when the truck is running, does it rev up?
Did it die while driving down the road (foot on the accelerator) or when idle? - If so, try cranking it and get your RPMs up to 1500-2000 RPMs and put it in drive (with your other foot on the brake). See if it will continue running if you never take your foot off the gas.
I wouldn't think catalytic converter, without it giving some indication that it was going bad, but without testing it is hard to say.
When it cranks and won't start, check for battery voltage to the coil on the dark green wire, with key ON. If you have power at the coil, it might be a bad coil. If no power to the coil, it could be a Crank Position Sensor or the Cam Position Sensor inside the distributor. If one of those is bad, it can stop the computer from sending power to the coil.
