The first thing I would check is fuel pressure. I have a hunch you have a leaking fuel pressure regulator. It is located on the end of the fuel rail on the passenger front of the engine. It will have a vacuum line running to it. Remove the vacuum line and see if gas comes out when you start the engine (sometimes all you have to do is turn the key on and sometimes it will be wet when you pull the hose off). If any of those are true than replace the regulator for sure.

Check the Idle Air Control (IAC) valve. If this gets sticky, clogged, or otherwise malfunctions, it will affect the idle quality, and usually not in a good way. You should NOT have to press on the gas pedal ever to start your car as it has fuel injection.
