It could be various things, like a loose connector deep behind the instrument cluster, or a blown fuse - check your manual to find out which fuse it is.
First of all though, as a former Golf owner myself, I'd suggest you check the dashboard dimmer wheel hasn't been turned to "really dim". On my old Mk3 it was exactly where a gloved right hand could inadvertently spin it round.
