Cooling fan

My 95' Caprice Wagon had the same problem with the fans. If you're any good at wiring you can try to wire in a manual switch for the fans. I think its cheaper than buying a new temperature sensor. As far as it stalling it could be any number of things such as flooding or its not getting enough gas or something. My weed-eater does the same thing to me. You may want to have a local shop check that out.

Please take it to a shop have a scan done before you cook the head.
