Is the motor in an xg350l an interference engine?

Yes, the 3500 V6 in the XG350 is an interference engine by design. Severe engine damage can occur if valve timing becomes incorrect due to timing belt failure.

I have a 2004 XG350 with 56918 miles on it, I was told 5 years or 60000 miles to do timing belt/chain. Should I wait for 60000 since i'm into the 5th year?

Relax, there's still plenty of time. You could go 6 years and 70000 miles with only a slightly greater chance of failure, there's plenty of over-engineering. But, if you're still under warranty and want to keep it, then change it at 59999.

2002 XG350 - Do I need new timing and drive belts?

timing belt and most drive belts are good for 70,000miles, i think the mechanic trying to take you for a ride, as for the drive belts inspect them if there is any cracking ware marks etc replace them but seriously if they look like new which they should with only that many miles would not need replacing.
