Is SAE 5W - 30 ok for my old Jeep and Cheyenne...

Its probably ok but I would recommend 10w30 for anything with more than 100,000 miles on the odometer.
Also, 5w30 works better in colder temps, the first number is the "cold thickness" and the second number is the "hot thickness". The bigger the number the thicker the oil in basic terms.

How much and what kinda oil for 2000 Durango v8

Five quarts of oil and if you have more than 75,000 miles on it use the High Mileage oil. If you live in a hot climate like me I use 10w40. Colder climates you might want to use 10w30.

What type of oil does a 95 pontiac grand am take?

i'm assuming engine oil and if it is a 4 cylinder i would use a 5W-30 but if it is a 6 cylinder i would use a 10W-30 only for better protection.

I live in Vancouver BC Canada. What viscosity of oil do I put in the engine for winter. I have the original tires, how much air do I keep in the tires?

All tires are different, the air pressure for your specific tire is listed on the tire itself.

I recommend a 5w-20 for cold climates

My 1999 Honda Odyssey Van has ~ 205000 miles on

I'm surprised a dealership made that mistake. Honda did start making engines to take oil until around 2003. I would go back and have them put the correct oil in the van. 5W-20 is not as thick as 5w-30, so the engine may start to make louder noises down the road. Just stick with 5w-30 for what the engine was made for.
