Hi,
This sounds like a module/gauge defect but you will need to connect to a diagnostic computer to be sure. In saying this I am assuming you have got a full cooling systerm! Silly I know but I have seen it happen when there is an airlock in the systerm.

Temperture guage moves frequently

This is normal. When the engine is up to temperature, the thermostat open and closes to keep the temperature in range, The needle will move.

2006 f150- temperature gauge stays cold but "check gauges" flashes in mini message center.

Since the temp gauge is not working correctly, you get the warning message.
Could be a faulty temp sensor or a problem in the wiring harness.

Temperture guage going up and then down loss of coolant as well

The temp gage is going up and down due to the lost coolant, this creates air bubbles that get around the engine coolant temp sensor, air doesn't transmit heat energy very well so the gage quickly drops. Have the cooling system pressurized with a special tool to locate the source of the leak. Common area of leak is the engine coolant pump driver shaft seal. Also look for white crusty looking stains, this is dried engine coolant.

Rad fan on always ofter engine shut off. no hot engine message temperture guage at normal range fan stays on @2-3min after engine turned of regardless of running 1 min or 1 hr.

The ECM gets it messages for heat from the engine coolant temperature sensor. The sensor is probably bad. Since the fans come on right away the ECM is in a safe mode for the engine. Meaning it turns the fans on because it can't read the coolant sensor. As far as the fans staying on for a couple of minutes this is normal when the engine is hot. The ECM does this.

Temperture guage goes from 180 to 260 and bounces back and forth. The service engine soon stays on constant. The check guage light goes on and off when the temperture goes red line.

The check engine light is operating correctly as the computer reads a spike in temperature range in the engine. Your problem is more than likely a bad thermostat. I have seen times when a bad or loose radiator cap would cause the same symptoms. If the radiator cap has been removed recently it could be that it is just not on correctly. Make sure you check this only when your engine is cold. Hope this helps you out

Check for an OBII code. have it scanned for free at an autoparts store. it is not the thermostat since you have already replaced it 3 times.Check for the temperature control sensor during scanning..
