Make sure and top up your coolant at every fill-up for a while. Airlocked heat exchangers tend to burp out air at random until none is left. My saturn still has a little in it, i can hear it the first time i take off from a stoplight in the morning.

Coolant bubbling out of the overflow


While driving with the heat on you are taking the heat off of the coolant via the heater coil, letting the engine stay a little cooler. You might want to have your radiator cap checked, coolant level and also the flow through the radiator. it could be plugged. take it to your mechanic if you are not comfortable doing this yourself. You can be injured by hot coolant under pressure.

2000 Pontiac Grand AM little heat being produced.


1st thing to do is change the thermostat. It is either missing, or stuck open (you provide good info). This is why the car is not running at operating temp and why you have little heat. The no blower for settings 1-4 probably means a bad switch.

A FROST PLUG ON THE DRIVERS SIDE IS LEAKING.

THE FROST PLUG IS LOCATED BEHIND A BRACKET HOLDING THE FRONT WHEEL DRIVE TRANSFER UNIT.

HOW DO I CHANGE THIS FROST PLUG?

Are you sure you got all the air out of the cooling system? Air pockets are very common problem when you do any work to the cooling system. An air pocket will do what you discribe.
