Climate control only blows cool air on defrost setting. Speed works fine. When I pull 10A fuse it resets but only momentarily. 01 Chrysler Sebring Sedan.

Is yours a coupe, sedan or convertible? If it's a sedan or convertible, there's acalibration technique you can run. With the engine running, turn the temp all the way to the cold side. Turn the mode all the way to the defrost position. Put the fan switch to any position other than off. Then press the rear defroster button until you hear a chime. Let it go. The system will go thru some gyrations and give you a "report" in your odometer readout. A "0" is good.
You may have a bad control head. As you noted, the default mode is defrost, so if the body computer senses a loss of signal from the controls, it will put it into defrost.
Again assuming yours is a convertible or sedan, salvage control heads are fairly commonly available on ebay and in junkyards. The part is used in the sedan and convertible and in the Dodge Stratus from 2001 through 2006, so there are lots of them out there. It's an easy replacement which I would definitely try before tearing the dash apart.
The IOD fuse is the one in the middle of the fuse panel at the left end of the dashboard. Easily recognized by the "ears". You can pop it out with no tools.

My 2000 Sebring Convertible with 2.5L V6 e sudden

had this not long ago with a seat ,,,take the sender unit out the tank and check the flexable pipe from the pump to the pipe connection ???,if this appears ok the check the multiplug for signs of overheating and cooking of the plastic .If the wiring is burnt in the connectors then cut them off and rejoin by drilling two small holes to pass the new two cables through or a slightly bigger hole is its a twin flex cable .join to the pump wires by soldering the cables then covering with a silicon based sealer ,seal the top hole up as well ,allow for silicon to dry .them refit unit and use a couple of screw type block connectors for the external connection and bobs not your uncle off you go .As for battery life?? well too many variables

Removing the 2.7 engine from 2001 sebring sedan?

ok heres the simple version its alot of work
remove hood put someplace safe
disconnect all wireing and mark off with masking tape and marker
****** you need car lift ******
remove all plastic part molding from engine
find the engine hoist holes for chain to hook to
this is a unibodi design so the whole front chassis drops down
unbolt the chassis make sure to have the chasis blocked and stable
lift car while chasis stays on floor engine tranny and every thing inside hood comes down on the unibody this is how you remove an engine from a sebring

or you take to the dealer spend the doe cause you got a nice car and have it done right
