I would see if the gauges are connected at the harness behind the instrument panel. But, that can be time consuming to take apart that part.
There is probably a separate temperature light that indicates when the engine is too hot. If not, then just make sure that the coolant level is high enough, that the thermostat is not stuck closed, and the fans turn on when the engine gets to normal operating temperature or when it is hot.
GM vehicles from the 1990s can go a long time before overheating occurs due to leaks or break downs in the cooling system.
If there is a slow leak in the cooling system, though, I would fix the problem before a lack of feedback causes an overheat condition in the engine of the vehicle.
