Common fault is fuel pump getting damaged after engine overheating.
The pump is located in fuel tank, to know if pump is working, check fuel pressure using an hand gauge. It is available for $25 or so.
Check if there is coolant. If engine restarts check coolant level, if that goes down, then the head gasket has been damaged.
If fuel pressure is OK, check injection and distribution.
usually is you have the ac turned on at a really hot day...the vehicle over heats...and after it cools down then the car starts to work again... everything would be fine if thats what happened... but if not...then just check if there is coolant in the vehicle... if there isn't then you might have messed up the engine...you may need major work on the engine...like the head gasket might need to be replaced or maybe the engine block might have cracked...if there is coolant then you should be okay?

Not true.
This car fuel pump is quite delicate. If the Jeep Cheerokee shuts down because of overheating or any other fault the pump is one of the part to check. The Cherookee pump keeping standard fuel pressure between 45 50 psi. Sudden shut down causes the pump pressure drops. It is not uncommon the pump failing afterwards. I know that fuel drop in pressure or faulty pump cannot cause overheating. It is in this particular vehicle that a fault like overheating can affect the pump. That comes from casistic, I do not guess usually. :)
And about overheating, if coolant level does not go down while you drive, then the gasket is still good.
Turn AC on and see if the fan does come on, if it does not, then there should be fuse controlling fan. I think this model has no relay, hydraulic pump should be directly controlled by the ECM (I have no service manual right now) If there is a relay, then it is located below the right headlamp you need the bumper fascia first. The fan motor can be tested by energizing it directly. There are several safety issues related to this test.
If the fan is running ensure that the ranning is running at full speed. You won't be able to distinguish the blades shape if fan its running at its regular speed.
By the way, if the engine is restarting and working properly, then the pump is OK. I mentioned because I understood the engine was not starting after the problem.
Check if the fan is OK. If fan is working, then bleed coolant, as air pockets or bad circulation can cause overheating. If that does not fix the problem, there may be blockage in the heat condenser, and that would explain problem coming only with AC on. Temp sensor is other part that must be checked. Water pump is unlikely involved, or you would get overheating much sooner.

Sounds more like the Crankshaft Position Sensor (CPS). Had same problem on a Cherokee Sport. Replaced it and running fine, since. When it goes bad, it builds up a charge or heat, and has to sit for a few minutes before it'll start again.
