My 04 gmc envoy runs great until it reaches operating temp, then it starts running like its miss firing

You might have your cat converter looked to. It may be getting clogged. Or your coil packs are getting weak. If you haven't done one in a while, the first thing I'd look to do is a tune up with new plugs, wires, etc.

My 91 Dakota starts hard and runs rough for a while and the check engine light stays on (no one around here has an analyzer for this year). After running a few miles you can shut it off and start it back...

Probably you have a lean fuel mixture for cold start up and running, but performs normal when the engine has reached operating temperature. So check all items responsible for fuel mixture such as fuel pressure and flow, air leaks ( use a smoke machine for this) choke system ( if carburetted) , engine coolant temp sensor.

Engine starts missing after it reaches operating temp

its hard to locate since you don't have any more info, but it could be the spark plugs, wires or coil. I would suspect the coil because the electrical resistance builds as heat increases

Stalling out at normal operating temp!

it sounds like the fuel pump is quitting once it gets warm. I've seen this plenty of times. When you turn the key to on, not all the way to start you should hear the fuel pump humm for a second or 2. When it quits on you try this to see if you get that humming. I bet the pump is dying, specially since everything else is new. Good luck and I hope this helps you.

Do you have spark??? if so, check fuel pressure, these trucks must have 60 psi to run, 50 psi will not work,.

Very bad idol and run condition.

sounds like a possible water temp issue... check your thermostat and/or water temp sensor. when you first start your engine the computer uses the water temp reading to do a 'cold start' scenario, more fuel. once you reach normal operating temp the fuel should be cut back. if the thermostat is not opening and closing properly this can cause strange readings from the water temp sensor (which is mounted near the thermostat)... unlikely the sensor is bad, but a possibility... more likely the thermostat.
