I have a 1985 Nisson 720 standard bed pickup. The engine cranks over but is hard fireing. When it does fire up, it runs fine until I let off the gas and then it stalls. I've checked all the vacuum lin

This is what I would do. Start with adjusting the idle speed screw til the motor runs without holding the gas pedal. With a timing light adjust the timing to the specifications back idle speed to about 750 rpm. This is the tricky part connect a vacuum guage to a manifold vaccum. If the timing is right the guage should be around 16to18 inches of vaccum. Turn the mixture screw in til the engine starts to stumble then turn screw out til the vaccum guage reaches its highest reading. The vacuum readings will drop off if you go to far out so going back and forth 1 full turn is common. I usually go to the maximum vaccum then half of a turn in. Mark one end of the screw slot to give you a reference to be able to count the number of turns. All these adjustments are done with the engine at operating tempature vaccum advance disconnected vaccum line plugged unless specified by the manufacturer. It's on the sticker under the hood.

A/C coming out of defroster and will not go to any other settings

It is a loose vacuum line, and you'll just have to trace it by hand as to where it needs to go. You might be lucky and have a vacuum line diagram under the hood, or you could buy a Haynes or Chilton's manual for the diagram. Vacuum is what controls the dampers in the air box(s), and with that line being loose you aren't getting sufficient vacuum to move them.
