Is transmission output shaft changeable on manual as it seems to have play hense clunking sound

Yes it is changeable but why not replace the spiggot bearing instead,cheaper.

My ford escort quit moving in the middle of an intersection. Engine was still running, but car quit. I hgeard a "clunk" as I was turning. what could have happened?

Most likely one of the CV [constant velocity] universal joints on one of the drive shafts broke.
If it is an automatic transmission, something in the transmission may have broken; but automatic transmissions usually give other symptoms like slipping before actually breaking with a clunk.
If it is a manual transmission, it could be the clutch or the transmission that went clunk.

Gear box in my l300 4x4 ute is makeing a clunking sound in all gears apart from 4th and when clutch peddel is down it isnt makeing the clunking sound any ideas?

The bearings in the gear box are gone. When in 4th gear the input and output shafts turn at the same rate 1 to 1 ratio. In all other gears the shafts are turning a different rates and the clunking is a slight meshing of the gears. When the clutch is depressed there is no power (load) on the input shaft.

The transmission is clunking when I accelerates.

Might be the play in the drive shaft or play in the pinion gear.

When i slow down to 20 mph as it shifts down it clunks. and as i am parked and i try to put it in gear it makes the same clunk sound.

it sounds like you may have a bad universal joint in one of the drive shafts,more likely in the main shaft that runs from the transmission to the rear differential.

I have a 2001 Chevy Silverado King Cab 2500 HD. I do tow a 6000 lb boat so many of the miles are hard miles. Had it and the boat out 2 weeks ago, no problem. Got in yesterday, driving down the road...

First verify that your drive shaft universal joints are not worn out. You can do this if you can raise the truck and place it on jack stands and block the front wheels to prevent movement. This takes the load off the drive shaft. Rotate your drive shaft CCW and CW by hand to check for any play in the universals, and listen to see if you can hear the 'clunk' sound. Universal joints are the cross shaped items with round caps at either end just before the yoke and splined yoke. Check transmission cross-member mount for wear, or see if it's torn or any mounting bolts loose. A clunk sound in my experience, has either been one of these issues.

I have a 2003 grand Am and there is a fluid leak around the spot where the right front wheel axle meets the transmission ( the transaxle?). Also, when the car is cold, sometimes I hear a clunking noise...

This sounds like two seperate issues to me.
You need a output shaft seal on the transmission and both lower control arm bushings replaced.
Both are very common.

Excess play in the transmission tail piece (manual transmission)

Normally there is a joint behind the transmission yoke.
