Question about 1998 Cadillac DeVille
Northstar? Look for exhaust in cooling system, espeically under pressure, the repair for this is usually cost prohibitive at 5 to 8 grand. The issue is usually pulled head bolt threads in aluminum block. Compression gasses get pushed into cooling system, and that pushes out the coolant, while driving.
I fixed mine, but MAN, what an expense.

Don't do that.
You should never let an engine overheat, you should never rapidly cool it off, and you should never put water "on" the engine.
First of all, you need to determine if there are any leaks.
If you can't see one, but the fluid goes low, then you need to run a pressure check by getting a pump and gauge at a place like Autozone. Check with engine off and on, to find head gasket leak.
If there is no coolant leak, then change the thermostat, check the water pump belt, and make sure the fan, fan relay, and fan thermoswitch all work by shunting the thermoswitch and also seeing the same results without shunting.
But it could be there is no problem.
Engines should reach over 200 degrees sometimes, and many part should steam if you throw water on them.
That is no way to tell if it is overheating.
You should probably have a gauge installed.
