Radiator cap is not likely. See my tips at http://www.fixya.com/cars/r5929960-s_thermostat #1 for most frequent causes of a leak.

2000 jeep grand cherokee' recently had the head replaced, is it normal to use a little coolant each month.

A sealed system should be that. Either the coolant is overheating and steaming out through the reservoir, or more worryingly, the new head gasket is leaking. That is assuming they used a new gasket and sealant.

Is anyone familiar with 2000 Jeep Grand Cherokee cooling system?

This is caused by trapped air in the system, this can be from a coolant change done incorrectly without bleeding or a low coolant level or it can be due to a leak or a blown cylinder head gasket.

Leaking engine coolant. the coolant eventually all leaks out and car over heats.

Does the leak show up on the ground when you are parked with the engine running or stopped.
Determine where it's leaking from. Hose? near fire wall, near radiator. Water pump will leak when it's worn.
Can you smell it when you're inside the car? heater core.

coolant come in two versions mixed and unmixed, in unmoixed use half coolant and half water, you can add coolant yourself but do not remove the radiator cap when the engine is hot, its under pressure and dangerous, any good brand coolant will do, then have the system checked for leaks

The engine coolant consuption is high for jeep 2000 model

try a product called radweld(works like egg white).could just be hose/clip .if oil getting contaminated then you have a head problem.

2000 jeep grand cherokee runs hot and heater quit working

Overheat with no heat usually has two possible causes. First, the coolant level has run low due to a leak (find leak and re-fill system)
Or, you have a failed cylinder head gasket that is permitting combustion pressure to enter the cooling system driving the coolant out of the heater core (usually you will find coolant in the oil, oil in the coolant or have white smoke at the tail pipe...some or all of these)
Comon tests for that are a radiator hydrocarbon test, cooling system pressure test or a cylinder leakdown test.
Hope it turns out to be something small!!!
Good luck

When i drive my 2000 jeep grand cherokee some times it just shuts off and i cant get it started for 10 min at a time or some times after it runs it would only go 50 yards or so and then shuts off. im...

Check the automatic shutdown relay (ASR) in your fuse box under the hood close to the battery. Try switching the relay with an other relay and see if your still have the problem, the other thing that can cause this is a bad sensor like the cam shaft sensor or crank case sensor going bad. Try switching the relay first then if there is no change, try pulling a dtc code from the computer, Here is a link and hope it helps, keep me posted. Check gauges light comes on

Sounds like a CPU problem. your radiator may need a good flushing a s well. i would also check the heater core for any unusual problems like seal break or leakage.
