Make sure the alternator is charging enough,13.65 volts to 14.25 volts at the battery with the ac on high blower and the headlights on.If it is,then see if there is something staying on with the key off and doors closed. The clocks in the radios where bad to cause a draw in these cars also. And the alternator can have a bad regulator in the alternator housing that will cause this also.

Have the batteries individually load tested. All it takes is one weak or bad one to kill the others. A s volt meter won't do. They need to be load tested.

I have a 99 chevy malibu ls. It started just fine until one day I came out to find it would not crank over. Just got the dash lights. Thought it was the battery so I put my jump pack on it and it started...

That would indicate a dead battery. Get it load tested for free at your local auto parts dealer. Also make sure connections are tight. It would be the alternator if battery load test is good.

have the battery load tested as there is no guaranteed service life for batteries ( that is why you get a warranty period )
next have the charging system checked by an accredited auto electrician ( alternator , voltage regulator and drive belt tension and possible current leakage from failed relay or wiring problems )

Brand new battery dying quickly on my 1999 jeep cherokee. draw was not bad, but it only lasts about 4-5 days without being driven before it dies out.

Never saw an ammeter that had a "normal" reading on the gauge face...You aren't reading the dash gauge are you? Normal procedure is to place an ammeter between the battery and either lead and read draw that way. Then remove each fuse till the draw diminishes substantially. An alternator can draw a bit but it should not be excessive.
Checking charging volts, the meter should not read below about 12.5V even with all accessories on and should not continue to drop regardless of running time. (accessories off reading should be between 13 and 14V).
Also have battery load tested if you haven't done that already just to make sure it is good (even when new) and make sure something simple like a visor mirror light or glove compartment light isn't on all the time.

I start my truck, it runs great. As soon as I shut it off it dies

You are correct. If your battery tests good, then the starter is your problem.

Replace your battery when its being tested there not testing it under a heavy enough load. A battery could have a dead cell in it and still show good on the charger. I've had that problem a few times.

Battery dies while sitting idle

Well it could be possible that you have a cell that is going bad.. This would cause battery to fade with little draw from onboard accessories (ie: clock, etc...) Why not spend a couple dollars and install battery isolation switch you can flip when vehicle is expected to sit for a duration... I know this doesnt solve the drain problem you have but could be a solution for not having to jumpstart it when you need to ude it..Good Luck
