There could be a number of reasons
1 if you just toped it up you could have air in the system
2 the cooling fan may not be working
3 the termastat is no longer operating ( they normally fail open )
4 the coolant is old or contaiminated and needs changing
5 a leaking head gasket ( you exhaust will smell sweet and look white in color
6 a blockage in the engine passages the coolant flows
