Cold engines require more fuel to run evenly and yours isn't being enriched enough.
There are two items which can affect cold operation; cold-start valve and the idle air control.
If both are present, one of them probably isn't working as it should.
You might try having your computer scanned at one of the chain auto parts stores if you are in North America. Call to make sure they still do it free of charge.
