Will a 1991 Dodge Caravan transmission fit a 1997 Plymouth Grand Voyager?

Have to check the unit model in each vehicle
The 1991 is an OBD1 & the 1997 is OBD2 --so
it won't work if it does match up mechanically
Do yourself a big favor & get rid of any chry van

Will the brake booster from a 2000 dodge grand caravan fit a 1997 dodge grand caravan

It's a difficult question to answer. The manufactuers make vehicles a little different from year to year.Ask at a Dodge dealership and/or purchase a repair manual on both models and make comparisons. You might be better off buying a new booster.
