This sounds like a tuneup is needed, if you have the 4cylinder engine then replace the sparkplugs the boots and the coilhousing, the coil housing is the part thats holding the coils when you remove the top cover it on the bottom of it. good luck.

have your cat convertor checked at exhaust shop for free,looks like it is partially clogged,or it can be your TPS(throttle position sensor)

sounds like fuel related, as no codes show back to old skool,check all air intake/vacuum hosses for condition check for blockage in main air intake hose/pipe check for fuel pressure and injector spray pattern, check they color of deposits on the spark plugs , check exhaust is not blocked ,try this lot then let me know how your getting on

2001 Grand Prix jerks when driving mostly at higher speeds like 70-80 mph. It can do it at 40 mph too and it seems to be when I accellerate. Also, turns off the Cruise Control if its on when it jerks. ...

make a mixture 1 liter two table spoon of salt in bottle with spray
engine idle spray your mixture not too much and see if you have spark on wire ,coil you won't see it if too much mixture
and about spark plugs you could change it too
you have a misfire

Have you had the computer control module tested for fault codes? That is the very 1st step to diagnose any electronically controlled 3engine problem these days, numero uno!

Car jerks from second gear to third especially at low speeds

This means that you are in a too high of a gear for the should not be driving at less then 2000rpm in any gear except first, or you are on the edge of stalling the car.
